We had a great week last week. The county we live in was anticipating bad weather on the day we attend Classical Conversations so it was canceled. The weather actually ended up being nice and sunny so we had a great unexpected day off where we went and ate at Chick-fila and played. We delivered some to my husband at work so by the time dinner rolled around, none of us were hungry. We ended up just eating leftovers leaving me a meal to roll over into this meal. Don't you love when that happens? It's like a bonus meal!
Here's what on our menu this week...
Monday- Apple and Onion Pork Chops with mashed potatoes and sauteed whole green beans
Tuesday- Bacon Shrimp and grits with sauteed spinach (I'm making my own recipe, I'll let you know how it turns out)
Wednesday- Greek Burgers in pitas with tzatziki sauce and Greek salad
Thursday- Eggplant Parm stacked with ricotta spread in between, squash noodles, spinach salad (Candle lit of course with chocolate covered strawberries. We're celebrating as a family since we had our romantic date last week to beat the crowds.)
Friday- Loaded Tacos, slow cooked black beans
Saturday- Breakfast for dinner (probably veggie omelets and whole wheat banana muffins)
Sunday- Something in the crockpot. Any suggestions?
